In a bowl, add curds, salt , turmeric powder, lemon juice and mix.
Add in the chicken pieces and marinate in refrigerator for around 2 hours or more.
Heat a pan, roast red chillies, coriander seeds, cumin seeds, peppercorn, fenugreek seeds and remove it off the flame.
Grind the roasted mixture with tamarind and garlic to a fine paste.
Heat a little ghee in a pan, add the marinated chicken and cook until its done.
Transfer the chicken to another bowl. Remove the liquid released by the chicken in the separate bowl. Keep this aside.
Add remaining ghee to same pan, add the masala paste and fry until the raw smell goes.
Add the fried chicken, salt to taste, 1/2 cup of the liquid seperated and saute until the masala dries up.
Add sugar, curry leaves and coriander leaves.
Chicken Ghee Roast is ready to eat.
